Stuffed Pastas for Entertaining
This class examines various types of stuffed pastas, assorted
seasonal fillings and their appropriate seasonal sauces.
We will explore several types of stuffed pasta: laminated dough,
colored dough, stuffed pasta shapes  
The hands-on portion of this class will include making 3 different
colored pasta doughs, 3 different seassonal pasta fillings and 3
different seasonal sauces.

The Pasta Rules
This class examines the different types and shapes of pasta and
their specific sauce accompaniments.
We will also explore which pastas work best in each of the four
seasons based on their texture and appropriate sauces.
The hands-on portion of the class will consist of making 3 different
homemade pasta sauces for
and 3 different shaped & different textured pastas.
A Seasonal Sauces recipe booklet and Pasta Shapes cross
reference chart will be provided for each student.

Vegetarian Cooking Italian Style

Anytime is the perfect time to explore Italian Vegetarian cooking. Italians use
Vegetables as a staple for their common diets. They utilize vegetables for
everything from simple techniques such as saute and grilling to stuffed,
roasted and with raw marinades.
We will explore your  5 favorite Vegetables incorporating new Italian style
techniques for each.
The hands-on portion of the class will feature 3 different recipes for each
chosen vegetable.

Italian Antipasti

This class explores the art of entertaining Italian style. We will discuss
Antipasti appropriate for the Spring and Summer season including regional
olive oils, regional cheese & fruit accompaniments, regional charcuterie,
various crostini and bruschette, and vegetable involtini. The hands-on
portion of this class will include creating fruit & vegetable cheese platter
accompaniments,
2 hot crostinis, 2 cold bruschette, and 2 vegetable involtini.

Tuscany & Umbria

This class is divided into 2 sections. The first 2 hours we will discuss
Tuscan cooking, its role as the ‘Italian Culinary Gateway’, and the main 3
components to a Tuscan meal: primi, seconi and contorni. The hands-on
portion will include creating a soup, braised meat dish, and cooked
vegetable side.
The second portion of the class focuses on Umbria. We will explore the
geography and topography. These 2 issues are key to understanding the
Umbrian kitchen. Our Umbrian menu will focus on regional meats, green
vegetables and black truffles. During the hands-on portion of the class we
will create meat antipasti, pasta with fresh greens & beans, truffled
vegetable sides and country style fruit pies.

4 Hour Classes $450
A Formal Italian Meal

The formal Italian meal is comprised of no less than 13 dishes: 1 cold
antipasti, 1 hot antipasti, 1 rice based primi, 1 pasta based primi, 1 meat
dish, 1 hot vegetable side, 1 cold vegetable side, 1 palate cleanser, 1
cheese course, 1 dessert course,
1 fruit course and finally a short espresso.
During this class we will discuss the role of each dish in its specific order
and wines that make nice accompaniments. We will also cover regional
differences between offerings. The hands-on portion of this class includes
creating 1 of each of the dishes with a discussion on variations for each
course.
